While hand sewing, how do you stop the thread knotting?

Just mended a vinyl bag, and had to re-do part, because the thread knotted, and I couldn’t undo it.

It sounds like the piece of thread you were using was too long. If you sew with a long thread it usually does twist and knot. Just a length from your hand to elbow should be fine.
